We work with small farmers and ranchers that each week provides us with their pure food free of GMOS (Genetically Modified Organisms), of indigenous varieties and breeds to preserve biodiversity.

Also with artisan fishermen respectful with the sea to offer sustainable fisheries. Depending on the seasonal foods we produce a balanced menu for all tastes, diets and intolerances. With vegetable and animal protein.
